
The grape harvest
In September the grapes are transported to the winery with our own trucks (with a maximum capacity of 2,000 kg) to guarantee the good state of the grapes and prevent them from breaking. In this way it is possible to follow a proper process: softening with the skin to produce must, fermentation and oxidation.
The grapes are put into the reception hopper and immediately conveyed to the pneumatic press without suffering any harm, keeping them intact.
Once the pressing process has begun, the grapes are subjected to a minimum pressure (0.2 kg.) and the resulting must (flower must) is used to elaborate wine with 100% guarantee of origin Penedés Variety (White wines: Chardonay, Sauvignon Blanc. Red and Rosé wines: Cabernet Sauvignon, Merlot y Pinot Noir), and base wine to elaborate “cava” (familiar typical champagne): Macabeo, Xarel.lo, Parellada and Chardonnay.
