San Gabriel, a great wine stemming from the heart of the Duero, raised on the severely harsh conditions of the high central plateau, and tempered with monastic peace and silence.

An amazing, remarkable, natural landscape that has endowed us with extraordinary conditions.  Climatic changes, as unexpected as extreme, coupled with the hard work and expertise of our staff, create exceptional grapes.

There is concern for every detail, in line with the commitment to maintain tradition and respect the land and environment, and with the object of achieving the best conditions for the vineyards.

 

Production

The Tempranillo (Tinta Fina) grapes come exclusively from our vineyards, from  plots of land in La Aguilera, Burgos.

 

Harvesting is carried out by hand, thus enabling the first grape selection.  After being transported to the winery, which is situated on the actual estate, the grapes undergo a process of careful selection.

 

Afterwards, the must is obtained and then, using modern methods, storage takes place in fine, stainless steel tanks, with fermentation and maceration for 20 days.

 

The wine matures in French and American oak barrels, according to requirements.

Afterwards, it rounds off in the bottle.  The bottled wine is then to rest in the peace and quiet of the winery, allowing complex aromas to develop and culminating in the wine’s characteristic flavor.

 

Production is carried out in a completely natural, biological way, without needing to undergo any chemical process. 

 

To maintain the quality of our wine we are obliged to take a great deal of care, maintain cleanliness, carry out constant thermal-hygroscopic checks, and renew barrels and other materials on a continual basis

 

Every year there is an increase in the number of wineries in the Ribera del Duero. This has caused a growing demand for professionals with widespread experience and in-depth knowledge of all the functions of a winery. We can offer you this level of training at the SAN GABRIEL Oenology College.

 

The College started up in the academic year 2005-2006 and we are very proud of the fact that all the students who completed the course immediately found employment in local wineries.  In many cases these were positions of importance.  We have at our disposal a properly functioning winery, newly-equipped laboratories and a vineyard specifically for practical work.  Our students therefore leave fully-prepared for starting directly at their post in a winery, with expertise in all processes of development, from vine-growing to selling.
